Quick & Easy Corn Salsa Recipe
This quick and easy corn salsa recipe is great for serving with grilled chicken, for using as a taco topping, or for using as a tortilla chip dip!
Note: Sometimes I’ll keep the corn raw in this recipe and sometimes I’ll give it a quick saute before adding to the other veggies. It’s up to you! If you want to cook it, remove the corn from the cob, saute the kernels in a bit of butter or oil, and allow to cool before adding to the salsa.
Ingredients
- 1/2 cup chopped onion (sweet, red, or whichever kind you prefer)
- 1 cup diced fresh tomatoes (small diced)
- 1 jalapeno, seeds removed and diced
- 1 cup fresh corn kernels, removed from the cob (about 2-3 cobs)
- 1/4 cup chopped fresh cilantro
- juice of 1 lime
- 1/4 tsp garlic powder
- sprinkle of salt and pepper
Directions
- Add all ingredients to a bowl and stir to combine.
- Taste and adjust salt and other flavors as needed. Note: The flavors of the salsa will grow a bit more intense as it sits.
- Store in an airtight container in the fridge.
